
In October 2022, Shiseido Parlour Ginza Main Store Salon de Café will be offering a wide selection of parfaits and desserts made with Japanese chestnuts, pumpkins, and purple sweet potatoes, in the height of autumn. A new style of special plated parfait using Tamba chestnuts from Kyoto will also be available. We also offer desserts in the "Shinbashi colors" that were popular when Shiseido Parlour first opened. This special parfait on a plate combines the rich, sweet high-quality chestnuts of "Tamba chestnuts from Kyoto Prefecture" with black currants from Aomori Prefecture. The Tamba chestnut Mont Blanc cream is layered with Tamba chestnut ice cream, Shiseido Parlour's traditional vanilla ice cream, blackcurrant sorbet, milk ice cream, and more, and is topped with a sprinkling of rum jelly for a touch of flavor. Blue Curacao in the center of the plate evokes the "Shimbashi Color," and blancmange is hidden within. On a sheet of sablés are lined up chocolate with caramel and honey, apple pâté de fruits, pear macarons, cheesecake, and chestnut petit choux. This is a dessert that allows you to enjoy a variety of treats in every bite.

This plate features a colorful "Shinbashi-colored" fruit punch filled with various fruits. It is also garnished with baked chestnut confectionery, roasted green tea brulee, matcha mousse, and seasonal fruit. This month's dessert plate features a mini version of Shiseido Parlour's classic parfait.
■The Story of Shimbashi Geisha and Shiseido Parlour
Shiseido Parlour's history began in 1902 with Japan's first "soda fountain," which manufactured and sold soda water and ice cream, set up at the Shiseido Pharmacy. Since its founding, Shimbashi geisha have been its regular customers. The ties between them are so strong that the store offered a free gift of Eudermin (released in 1897), a lotion, with every glass of soda water, promoting it as the ultimate thirst-quenching beverage for drunk customers. It is said to have become a huge hit, becoming a major Ginza specialty. There is also an anecdote about how the store created a shamisen storage area for geisha to take a break with a soda water between shamisen lessons.
■Shinbashi Color
A bright greenish-blue, a traditional Japanese color. It is said that the color was named after the color of the kimonos favored by Shimbashi geisha, who were at the forefront of fashion at the time, in the late Meiji period, and that it became popular as a stylish color.
A limited edition tin of Hanatsubaki Biscuits in the "Shinbashi color" will also be released at the same time!
