Frederic Cassel's limited-edition "red" strawberry sweets for May! Also featuring a carnation cake perfect for Mother's Day

The theme for May's "Inspiration" series, which is proposed by Frederic Cassel every month, has been decided to be "Strawberry." The four lineup of cakes - Charlotte, Choux, Macaron, and Tart - will be on sale at the Frederic Cassel Mitsukoshi Ginza store from May 1st to 31st.


For spring/summer, a "Strawberry" collection will be released, based on the theme of "fruit rouge" ("red fruit"), which is the most important thing for Cassel when making sweets.

"Charlotte Fraise Citron Vert" (605 yen including tax)

"Charlotte Fraise Citron Vert" (605 yen including tax) is a Cassel-style take on the classic French pastry, Charlotte. It features a lime-scented fromage blanc mousse encased in strawberry compote and paired with biscuit. It's topped with strawberry coulis and fresh fruit.

"Choux Fraises" (648 yen including tax)

"Choux Fraises" (648 yen including tax) is a cream puff made with a crispy Cassel-style crumble choux pastry, topped with two layers of strawberry-scented mascarpone cream and custard cream. The fruity flavor of the strawberries hidden inside adds a finishing touch.

"Tarte Fraise Manteaux" (756 yen including tax)

"Tarte Fraise Manteaux" (756 yen including tax) offers a delightful contrast of textures and flavors: fragrantly baked tart crust, biscuit, strawberry coulis, and smooth mint-scented white chocolate ganache cream.

"Macaron Fraise Orange" (¥260 including tax)

Also available: "Macaron Fraise Orange" (¥260 including tax), featuring strawberry ganache cream infused with the bitterness and aroma of orange peel.

In addition, the lineup includes cakes perfect for Mother's Day and puddings perfect for early summer.

"La Fleur" (¥3,564 including tax) 12cm diameter

"La Fleur," adorned with elegant pink carnations, is a softly sweet vanilla mousse cake with strawberries, a gentle flavor loved by everyone. The large carnations not only convey your heartfelt gratitude to your mother, but also bring joy to sharing the cake together. This cake is on sale from April 28th to May 13th, and reservations are also available.

"Creme Caramel / Mango Pudding" (540 yen each, tax included)
"Creme Caramel / Mango Pudding" (540 yen each, tax included) have a smooth texture and a refreshing, juicy taste, yet are rich in flavor. The vanilla bean-scented pudding is paired with caramel sauce, while the vibrant mango pudding is paired with coconut sauce. Sales begin on April 25th.

In addition, from May 30th, "Moustache 2018" (778 yen, tax included), a playful cake that makes a perfect gift for Father's Day, will be available.
