Chocolatier Jean-Paul Hevin is launching a collection called "Bonne Annee (Happy New Year!)" to celebrate the arrival of the New Year. The "Galette des Rois" (3,932 yen), a chocolate-flavored puff pastry filled with almond cream and chocolate, is a traditional French treat that has long been enjoyed at the beginning of the new year. The thin, baked puff pastry creates a crispy texture, resulting in a refined sweet with a rich cocoa flavor. As a variation on the menu, the "Galette des Rois Pistache" (4,044 yen), made with pistachio-flavored crème d'amandes, will also be available from December 29th to January 12th. In France, a ceramic doll called a "fève" is placed inside, and whoever finds it is said to be blessed with good fortune that year. Evan's galette uses almonds instead of figurines, and fèves are also available separately. During this period, the eat-in "Bar à Chocolat" will also be offering a set menu called "Menu Galette des Rois" (1,415 yen), which includes one slice of galette and a drink.
In addition, from December 26th to January 13th, New Year's limited-edition bonbon chocolates will be available in stores. The lineup consists of two types: "Pied Pour" (452 yen) and "Vichy Rose" (452 yen). "Pied Pour" is made with almond and hazelnut praline, with pumpkin seeds added to add texture. "Vichy Rose" is made with French honey collected from buckwheat flowers, and is finished with a chocolat noir ganache.
