
Jean-Paul Hevin will be exhibiting at Salon du Chocolat 2016, one of the world's largest chocolate festivals, which will be held at the Shinjuku NS Building in Tokyo from January 27th to 31st, 2016.
At the festival, Jean-Paul Hevin will collaborate with former three-star chef Olivier L'Ollinger, also known as the "magician of spices," to pre-sell the Japan-exclusive "Cave à Chocolat 'La Sincerité'" (2,758 yen). This chocolate brings out the charm of cacao from Brazil, Madagascar, and Peru, selected by Jean-Paul Hevin, with L'Ollinger's "pepper."
The "Brazilian cacao + Sri Lankan pepper" combination emphasizes the cacao's fragrant aroma and nutty, powerful flavor. "Madagascar Cacao + Indonesian Pepper" refines the cacao's vibrant berry-like acidity for a more floral flavor. "Peruvian Cacao + Jamaican Pepper" transforms the cacao's citrus acidity into that of tropical fruit.
Also at the venue, "Exqui Momo," sold at Jean-Paul Hévin's chocolate bar "CHOCOLATE BAR (RE)," which opened in the Marais region of France in November 2014, will be available in petite size for the first time in Japan (2 bars for 1,000 yen, 3 bars for 1,500 yen). This popsicle bar features ice cream made with the finest Madagascar vanilla, coated with chocolate from different regions (Madagascar, Saotome, Venezuela), and topped with caramelized almonds.
In addition, the sales space within Jean-Paul Hévin's booth will offer Valentine's Day limited edition products and assorted sets of "Innovation" bonbon chocolates, exclusive to Salon du Chocolat.
