Pirouette, a multi-purpose dining space, will open in Toranomon Hills on September 3rd. The interior, which combines a bistro, cafe, and épicerie, will foster a new community of people and food, based on the theme of "combining casualness and high quality." Guests can enjoy seasonal ingredients recommended by the chef in the bistro and then purchase them at the épicerie on their way home. The restaurant aims to create a sophisticated yet informal space where guests and staff can build new relationships through food. The chef is Naoya Kobayashi, who values connections with producers and ingredients, and M.O.F. (Meilleur Ouvrier de France) recipient Eric Trochon has been invited to serve as advisory chef. Drawing on his experience at Michelin-starred restaurants Hommage and Hostellerie Géronme, Kobayashi will offer unique cuisine that makes the most of the ingredients.

The bistro offers two cutting-edge French prix fixe courses for each lunch and dinner. The course menus can also be ordered à la carte and are paired with approximately 150 types of French wine. Private rooms are also available for meetings and business dinners.

The cafe will offer lunch menus and desserts made by the pastry chef, and will also sell lunch boxes. In the evening, à la carte dishes and wine can be ordered, and there will also be tables available for casual standing use.

The Épicerie sells the ingredients, wine, and tableware used in the bistro and cafe. Each item is a carefully selected item that the chef and staff have sourced from producers, and staff can also offer advice on cooking methods.
