Matsuya Ginza's basement floor undergoes major renovation. Upgraded to match the upper floors.

Matsuya Ginza's Ginza Food Stage, a department store's food section on the first and second basement floors, underwent extensive renovations for the first time in 24 years and reopened on April 25th. An opening ceremony was held prior to the grand opening, with Matsuya Ginza General Manager Takehiko Furuya delivering a speech. "The concept is 'Food for Happiness.' We aimed to create something that's not just a 'department store basement,' but something a step above. The upper floors underwent a grand renovation last fall, and we aimed for the same in the food section. Especially in a time of tax increases, we want to stimulate the economy with a counterattacking spirit." A cake-cutting ceremony by Libertable followed, marking the store's opening. Customers were treated to a commemorative cake.

Food Department Manager Nobuyuki Narita explained the key points of the renewal as follows: "1. 'Conveying authentic Japanese food culture without being swayed by trends.' 2. 'Creating a relatable sales floor.' 3. 'The joy of food as fashion.' 4. 'Installing a duty-free counter this fall for overseas tourists.' 5. 'Renovating 72 of our 108 brands, or 70% of our total." Point 2 involves communicating information about ingredients, the thoughts of the producers, and cooking methods in a total of 13 communication spaces, including a "live kitchen" where demonstrations are held and a "sake tasting bar" where customers can try high-quality sake and food pairings for a fee. Events from the live space on the second basement floor will be broadcast on digital signage on the first basement floor, encouraging greater access to the second basement floor. This renewal will see 18 new shops, nine shops making their debut in a department store, one shop making its debut in the Kanto region, and 54 renovated shops. The first basement floor is home to Japanese and Western sweets, bread, Japanese prepared foods and bento boxes, Gourmet Marché (Western prepared foods), Gourmet Marché Vin (wine), Gourmet Marché Sake (Japanese sake), Western and Chinese prepared foods, and a section selling gifts from famous shops, while the second basement floor is home to fresh produce and groceries. Newly opened Western sweets include "Bvlgari Il Cioccolato," a luxury sweets shop made at the nearby Bvlgari Ginza Tower; Tokyo brand "Libertable"; and Kyoto's "Muni-an," known for its truffle chocolates priced at 600 yen each. Matsuya's select shop, "Meika Ippin," stocks high-quality Japanese sweets suitable for Ginza souvenirs, such as "Himari," a shop selling five-colored fufu balls, and "Matsushimaya," a shop selling bean daifuku. Gifts include long-established brands such as Shinso, a long-established kelp shop in Osaka, Nihonbashi Sembikiya Sohonten, which sells high-quality fruit, and Fukujuen, which sells 70% matcha. Boxed lunches and prepared foods are available, focusing on makers who are particular about ingredients and production methods, such as Nakahora Farm, which produces milk from free-range cows, where only 10 liters are squeezed per day, Leccornia per Uccellino, an additive-free soup that only tastes of the ingredients, and Moulin de La Vallée, Karuizawa's authentic smoked salmon, which is slowly smoked for over six days. For fresh produce and groceries, we have selected producers who use high-quality ingredients and process them in a way that suits the times, such as Ginza Hatsune, which sells beef aged using the dry-aging method of Sanoman and Tosa no Akaushi, a breed of cattle that only 2,000 remain; Korokuya, which sells mushrooms without bags, exposing them to cold air; and Dashi Kobo Sotatsu, another brand of the kelp shop Shinso. The wine selection is the largest in Ginza, with 900 brands, and the sake selection is 450 brands from sake breweries from all over the country that are particular about their production, with the mission being to "return to the origins of sake and convey the culture so that it does not end as a passing fad."
