
The pastry shop on the second floor of the lobby at the Hyatt Regency Tokyo in Shinjuku, Tokyo, will be serving up summer sweets from June 1st to August 31st. These sweets represent the changing seasons from early summer to the height of summer. Available from June 1st to July 15th are the "Rain Dance" (570 yen), a verrine that evokes the refreshing rainy season with pineapple compote layered with lemon and lime mousse and goldfish swimming in a basil jelly; the "Semi Shigure" (580 yen), a Japanese-inspired treat with pistachio biscuits resembling moss, peach compote, mousse, and roasted green tea cream inside a chocolate stone; and the "Sun" (570 yen), a gateau inspired by the midsummer sun, layered with banana compote, lemon-flavored cream, and hazelnut mousse on a crunchy corn grits sable crust.
Also available from July 16th to August 31st are three types of desserts: "Star Light" (580 yen), a gateau ball filled with jelly and mousse of blackcurrant and blackberry, chocolate biscuit, chocolate mousse and crunch, resembling the constellation Cygnus sparkling in the summer night sky; "Thunderhead" (580 yen), a gateau resembling a summer cumulonimbus cloud, combining dried meringue with exotic fruit compote and jelly, vanilla-flavored mousse and carbonated candy; and "Melting Ice Pop" (570 yen), a gateau that looks as if it is melting in the heat, made of coconut mousse coated in milk chocolate and three ice creams each filled with orange, raspberry and passion fruit. All three desserts are tempting with their photogenic appearance.
