
Bistro Marx, a bistro and sky bar boulangerie overseen by Thierry Marx, head chef of a two-Michelin-star French restaurant in Paris, and the French restaurant Thierry Marx, will open on September 24th at GINZA PLACE, a new shopping complex opening in Tokyo's Ginza district.
Bistro Marx's menu will focus on brioche, a type of light, leavened bread made with plenty of milk, butter, and eggs, an essential part of the French diet. The restaurant uses carefully selected ingredients and methods, including Hokkaido wheat, rich and sweet eggs, French cultured butter, and fresh yeast, to create irresistibly crispy brioche on the outside and fluffy on the inside. Multiple flavors, from sweet to savory, will be available at all times, with seasonal specials planned.
Other menu items include hamburgers and French toast made with brioche. The restaurant will also offer a wide selection of bistro dishes, incorporating bread as a tranchoire (plate), in keeping with the traditions of French cuisine.
The restaurant is located on the 7th floor of a building facing the Ginza 4-Chome Clock Tower, offering an open terrace seating area where you can enjoy a premium bistro and cafe menu. The "Sky Bar" offers a night view and colorful fruit cocktails and champagne made with seasonal fruits by top bartenders. The attached boulangerie also offers seven types of bread and a wide variety of gateaux, which can be enjoyed at home.
Meanwhile, Thierry Marx offers a warm and welcoming atmosphere, where diners can savor the creative and delicate cuisine of a two-star chef. While preserving the traditions handed down since ancient times in the history of French cuisine, the restaurant will incorporate new challenges and innovation to create a unique menu.
