
Frederic Cassel will be releasing three strawberry-themed sweets in May as part of its "Inspiration" series, which develops sweets based on a monthly theme.
Of the three sweets being released this time, the "Mille-feuille Finger Fraise Sanga" (700 yen) is a tart made with European Sanga strawberries. It is made with a caramelized mille-feuille dough layered with moist biscuit and strawberry coulis, and finished with strawberry bavarois and mascarpone cream.
The "Macaron Fraise" (241 yen) is a macaron with strawberry jelly encased in strawberry pâté d'amande cream. The "Tarte Fraise Mala des Bois" (600 yen) is a sweet made with strawberry creme chantilly, wild strawberry coulis, and a biscuit dough rich in almonds, all served with a sable crust.
Also, from April 27th to May 8th, "Mother's Day Entremet Flore" (3,400 yen) will be on sale as a Mother's Day dessert. This two-layered cheesecake is made up of a refreshing rare cheesecake and a rich baked cheesecake, and is decorated in the image of a lovely bouquet of flowers.
Other classic spring and summer petit gateaux include "Fraisier" (750 yen), which offers the classic combination of pistachio and strawberry, the best-selling "Jivara" (700 yen), and "Violetta" (721 yen), which features an appealing combination of blackcurrant and two-layered cheesecake, both rare and baked.
