Chocolates from JITSK, an up-and-coming chocolatier based in Antwerp, Belgium, will be arriving in Japan for the 2021 Valentine's season. JITSK's creations have earned them immense support from Japanese chocolate fans who pursue authenticity, with many passionate fans who subscribe to their unique philosophy. They will be even more powerful than last year.


JITSK's Philosophy
・Use of organic ingredients
They own their own organic farm on the outskirts of Antwerp, where they harvest seasonal fruits, vegetables, and herbs to use in their chocolate.
・Using seasonal, raw ingredients
Based on the idea of "bringing out the aroma and flavor that only seasonal ingredients have," they use "raw" ingredients rather than processed products.
・Making chocolate by hand
The chocolates are handmade in the atelier. This is to "bring out the full aroma."
・Creating completely new methods without being bound by tradition
They describe themselves as part of the new generation and have no barriers.
Chocolate doesn't need color
"Color has no taste." In their home country, no color is used in their chocolate, and it is simple, stylish and unadorned. (Only the few varieties sold in Japan are colored using beets or matcha.)

A new manufacturing method invented by Eesk preserves the orange flavor to the maximum extent. The juicy fruitiness and aroma of orange and the refreshing bitter taste unique to citrus fruits are combined with dark chocolate.

【About Chocolatier Eask Heinink】
Born in 1990, he is 30 years old. He was born in Antwerp, Belgium's second largest city, to parents who ran a florist. He studied at the prestigious PIVA confectionery school from the age of 12, winning the national junior chocolate competition. While still a student, he started his own business at 18, selling custom-made chocolates to famous restaurants and hotels. After graduating, he traveled to 50 countries around the world as a professional chocolate technical advisor, interacting with chefs from around the world and broadening his knowledge of techniques and ingredients. In 2015, he opened his own chocolate shop, JITSK, in Antwerp, which quickly became a hot topic for its high quality. His hobbies include repairing classic cars and a love of machines. He calls himself a "science major" and continues to create chocolates that transcend traditional categories like ganache and praline, while maintaining the traditional Belgian shell method. He believes in creating completely new, "evolved chocolate" with an open-minded approach.
