
Sweets & Deli, a pastry shop on the basement floor of the Palace Hotel Tokyo, will be releasing a dessert called "Piano Chocolat" (6,000 yen) shaped like a small grand piano on March 19th, "Music Day."
"Piano Chocolat" was originally created when the chef of the renowned French restaurant La Pyramide prepared it for jazz legend Miles Davis, who visited the restaurant between performances at a jazz festival in Vienne, France. It has been served at the Palace Hotel's Crown restaurant since 2003 and has been a long-time favorite.
This time, the pastry shop will also be offering this "Piano Chocolat" by reservation only. The piano itself, from the keys to the legs, is crafted entirely from chocolate. The body is finished with a luxurious two-layer mousse of gianduja, made with caramelized hazelnuts, and smooth milk chocolate.
