This year, two types of cakes are available: a classic shortcake with a refreshing taste, and Saint Honore, a tiramisu version.

Pastry chef Ouchi Koji's strawberry shortcake, created using light, refreshing, low-fat fresh cream, is a favorite with people of all ages, not only as an annual Christmas cake but also for the cream on the shortcakes he has served at past sweets buffets.
This year, the cream layer is made thicker, and it is filled with half-cut strawberries for a juicy and crunchy texture, further increasing the overall fruitiness.
The top is generously topped with strawberries, raspberries, blueberries, and redcurrants, giving it a voluminous berry feel. Two sizes, 12cm and 15cm, are available, so you can choose the one that best suits the occasion.

Layers of almond cream dough, coffee mousse, and caramel mascarpone cream are layered on top of a sable base, and it is topped with finger biscuits called savoiardi.
The cute choux pastry surrounding it is filled with coffee chocolate cream and finished with a glossy caramelized glaze. You can enjoy a variety of textures in one cake, and with the aroma of brandy and espresso, it is a cake that adults will want to savor slowly.
