Frédéric Cassel's inspiration changes every month, focusing on ingredients and exploring the depth of French confectionery. This time, there are four varieties: the familiar "Mille-feuille Finger," as well as "Macaron," "Saint-Honoré," and "Petit Merveille," a petit meringue gateau. The lineup includes "Mille-feuille Finger Fraise des Bois" (756 yen including tax), a layer of caramelized feuilletage, champagne ganache, coulis, mascarpone cream, and white chocolate; "Saint-Honoré Fraise des Bois" (756 yen including tax), a choux pastry filled with Grand Marnier-scented custard cream and topped with coulis and vanilla-scented Chantilly cream; "Petit Merveilles Fraise des Bois" (3 pieces/648 yen including tax), a crispy meringue pastry topped with fromage blanc cream and coulis and covered in a white chocolate shell; and "Macaron Fraise des Bois" (260 yen including tax), in which the tartness of fraise des bois stands out against the soft sweetness of vanilla ganache.
