"ALL DAY CAFE & DINING “The Blue Bell”," which opened in Yokohama's Minato Mirai district in July this year, is offering its first seasonal menu since opening. The autumn-only menu items, made with plenty of seasonal ingredients, include "Pizza board with homemade bacon jam and the aroma of four kinds of mushrooms and matsutake" and "Dressy pancakes with four kinds of chestnuts," which will be available for a limited time from October 12th to November 30th.

This New York-style board pizza is baked in a custom-made oven made with domestic bricks, resulting in an autumn-flavored pizza made with plenty of mushrooms. Four types of mushrooms (shimeji mushrooms, tokiiro oyster mushrooms, black abalone mushrooms, and maitake mushrooms) are baked raw in the oven all at once to bring out the aroma and texture of the ingredients, and when combined with the finishing matsutake oil, they create a gorgeous aroma and deep flavor. The homemade bacon jam, which adds an accent, is simmered with bacon and spices in matsutake oil, concentrating the flavor and further enhancing the aroma of each mushroom.

■Dressy Pancakes


“Autumn Marron-Beige” Dressy pancakes with four kinds of chestnuts
Marron glacé / Homemade chestnut kinton / Chestnut cream / Chestnut powder / Apple compote / Roasted almonds

Our signature menu item, the Dressy Pancakes, is made with a generous amount of chestnuts, a quintessential autumn sweet, and is finished as an autumn-inspired dish with a beige color concept. It is topped with four types of toppings that bring out the unique characteristics of chestnuts. Marron glacé adds sweetness, chestnut kinton adds texture, marron cream adds fragrance, and marron powder expresses the mellow autumn image of chestnuts. Furthermore, the refreshing apple compote adds a flavor accent, and roasted almonds add a texture and aroma different from chestnuts, making for a taste that you will never get tired of.

□Dressy Pancakes
Based on the concept of "Dressy" (= dressed up in a gorgeous manner), these pancakes express the vividness and elegance of their appearance, as well as the unique flavor of a variety of overlapping ingredients.
- Visual
Each menu item has a unique color concept to express its vibrant and vibrant colors. The dish is characterized by its elegant style, with natural powders sprinkled around the plate to match the color and ingredients.

・Pancakes
These melt-in-your-mouth pancakes are made with approximately 1.5 times the amount of cheese as in regular ricotta pancakes. Combined with meringue made fresh for each order, they have a light and fragrant texture. The pancakes are topped with homemade honeycomb butter(*), creating a unified flavor within the dish.
*Honeycomb butter: A special butter made specifically for pancakes, made by caramelizing honey and sugar and kneading it into the butter.

・Taste
Based on the health-conscious concept of our restaurant, all pancakes are made with superfoods such as edible flowers, nuts, and cacao nibs. By utilizing the natural sweetness and flavor of the ingredients and layering the flavors of the ingredients without adding excessive sweetness, we create a sweetness and texture that you will never tire of.
