
Cuisine[s] Michel Troisgros, a French restaurant at the Hyatt Regency Tokyo in Shinjuku, Tokyo, will be offering a collaborative lunch and dinner on August 7th and 8th with David Toutain, one of Paris's most acclaimed chefs.
David Toutain is the owner and chef of the Parisian restaurant Restaurant David Toutain. After graduating from culinary school, he honed his skills at various restaurants, including Bernard Loiseau, before perfecting his vegetable preparation at ARPEGE.
In 2013, he traveled the world in one year and participated in top international food shows. In 2014, he opened his own restaurant, Restaurant David Toutain, in Paris's 7th arrondissement, and the following year it earned a Michelin star. For this project, the restaurant is collaborating with Guillaume Bracaval, executive chef of Cuisine[s] Michel Troisgros, who honed his skills alongside David Toutin during their time at Arpège. A special course menu will be prepared for both lunch and dinner, alternating between dishes by the two chefs. Guests can enjoy the collaboration between two young chefs at the forefront of French cuisine: David Toutin, who skillfully expresses nature on the plate through his specialty use of vegetables, and Guillaume Bracaval, who is well-versed in Japan. Lunch will be priced at 15,000 yen and 24,000 yen, while dinner will be priced at 24,000 yen. Drinks and service charges are extra.
