
The select recycle shop PASS THE BATON will be releasing the popular Japanese sake "Dassai Tokugai" (720ml/¥1,300) at its Marunouchi store on March 20th and 27th. Only 60 bottles will be available each day, with a limit of three bottles per customer.
This sake is made exclusively from Yamada Nishiki rice, the "Tokugai" variety. Tokugai rice, commonly referred to as "broken rice" or "broken rice," accounts for approximately 5 to 10% of the rice produced during the polishing process. Asahi Shuzo purchases this "Tokugai" rice from farmers and brews it with the goal of "making delicious sake using the Yamada Nishiki rice properly." While it cannot be labeled as a "Junmai Daiginjo" (specially designated junmai daiginjo), the rice polishing ratio is the same as that of Junmai Daiginjo, at 35%.
Asahi Shuzo, the brewer of Dassai sake, adheres to traditional brewing methods while using a centrifuge for the pressing process. The company is also actively taking on new initiatives, such as providing alcohol as an official sponsor of Mercedes-Benz Fashion Week Tokyo.
