Also Soup Stock Tokyo in Jiyugaoka, Tokyo, will be offering a limited-time "Oden Course to Enjoy with Cherry Blossoms" starting March 10th.
The "Oden Course" at Also Soup Stock Tokyo is served around a large kotatsu table, which appears only in winter on the rooftop terrace. The main dish, oden, is made with a French base of ingredients such as veal stock and porcini mushrooms, combined with bonito, kelp stock, and a bouillon made from aromatic vegetables. The key to this restaurant's wine and soup selection is the carefully crafted "dashi" that pairs perfectly with wine. To fully enjoy each flavor, the ingredients are cooked in different stocks, left to soak in the flavors overnight, and then simmered together just before serving.
