"Our relationship began when designers and brand representatives were fans of our coffee. In today's world, buying clothes isn't just about buying clothes from fashion brands; how you spend the time before is also important. I think coffee is a perfect match for this era." Omotesando Koffee offers one house blend and one daily recommendation on the menu. The house blend is a blend of four regions: Brazil, El Salvador, Ethiopia, and Indonesia. The recommended coffee is sometimes a blend and sometimes a single origin. They order the roasting process in detail from a roaster, then blend the beans themselves.

"We started using an after-mix method because we wanted to properly express the flavor of our coffee. There are two ways to blend. First, with a pre-mix, the green beans are blended and then roasted, which is consistent but tends to result in an average flavor. Second, with an after-mix, each bean is roasted to its best and then blended later. The latter has more volume and a distinct flavor."

Kunitomo strives for coffee that is rich yet clear, with a flavor that begins, develops, and concludes. "I'd be happy if more people could explore and enjoy it, just like restaurant food or chocolate," says Kunitomo. This coffee is surprisingly well-suited to Japanese tastes. It's another style I'd love to try.
