Hotel New Otani's pastry shop, Patisserie Satsuki, is offering its popular "Super Mont Blanc" (2,000 yen) made with Japanese chestnuts sourced from carefully selected regions until January 31st next year.
This year's highlight is roasted almond milk, which has a unique flavor that is rich and full-bodied yet refreshing. It is rich in vitamins and minerals and is known for being low in fat and healthy.
This year's "Super Mont Blanc" uses roasted almond milk made with Japanese chestnuts sourced from carefully selected regions for the cream, kudzu, and base. The base is made with an original Linzer Siritzorte dough, inspired by the Austrian "Zinnlertorte," said to be the "oldest torte in the world," and made with roasted almond milk, vanilla beans, carefully selected brown rice eggs, and a blend of whole grains.
On top of that, layers of seaweed salt, kudzu roasted almond milk dough, brown sugar bean paste, candied domestic chestnuts, and rich roasted almond milk cream are layered, and finally, all of these are wrapped in Japanese chestnut paste from the Sanda region of Hyogo Prefecture. The topping is chocolate sprinkled with gold leaf. Each of the roasted almond milks used in different ways creates an exquisite harmony of flavors without overpowering the natural flavor of the Japanese chestnut.
