Nikolai Bergmann x Andaz Tokyo to host Autumn Flower Dining for two days only

Andaz Tokyo's main dining establishment, ANDAZ TAVERN, will be hosting an Autumn Flower Dining event in collaboration with flower artist Nicolai Bergmann for two days only, on October 9th and 10th.

The Flower Dining will offer a dinner and lunch course menu featuring a variety of unique menu items that combine Executive Chef Gehard Passruger's creative dishes using autumn ingredients with Nicolai Bergmann's artwork featuring colorful seasonal flowers.

The dinner course appetizer, "Cold Scallops with Cabbage Ginger Emulsion, Caramelized Sudachi Citrus, and Chips," will be served in a flower box, a signature item from Nicolai Bergmann Flowers & Design. Guests can take the flower box home as a memento. Other dishes offered in the dinner course include monkfish garnished with beets and Iberian ham shaped like red flowers, and roast quail adorned with a wreath of vibrant seasonal flowers, including black truffles and pumpkin. The main course is seared Ezo venison, served with garnishes of chestnuts and maitake mushrooms on a fragrant tree trunk. For dessert, a playful persimmon composition featuring artwork by Nicolai Bergmann will be served.

Regarding this collaboration, Nicolai Bergmann commented, "Through this collaboration between the chef and the flower artist, we hope that our guests will not enjoy the food and flowers individually, but rather a single 'creative experience' that is born from the combination of the food and flowers.
