
The Cafe by Aman, located in the annex on the first floor of Aman Tokyo, is selling White Day chocolates (set of five/¥2,800 including tax) until March 14th.
This set includes five types of chocolate made with cacao from five countries, including Tanzania and the Dominican Republic. Aman Tokyo's pastry chef, Yoshihisa Miyagawa, has added aromas to each chocolate to bring out the natural flavor characteristics of each cacao, and colored them with colors that are easily associated with each flavor.
"Silver" is a bitter chocolate made with 66% Mexican cacao, which has a spicy, bitter aftertaste, and a refreshing ginger aroma. "Red" is a milky chocolate made with Papua New Guinea cacao, which is known for its nutty aroma, and is enhanced with a mellow caramel aroma. "Aman Logo" is made with 75% cocoa chocolate from Tanzania, which has a subtle aroma of vanilla pods, and vanilla beans are added to bring out the vanilla aroma.
"Yellow" is made with 70% cocoa chocolate from the Dominican Republic, which has a bitter taste with a subtle hint of citrus fruits such as orange and lime. Orange peel flavoring accentuates the fruity acidity. "Green" is made with 40% cocoa milk chocolate from Ghana, which has a dried basil herbal aroma and a clean aftertaste, and is combined with mint for a more mature flavor.
