He combined rare Tanzanian cacao, which is in short supply, with Mexican cacao, said to be its origin, to create a chocolate that's approximately 70% cacao. The Tanzanian cacao is characterized by a complex nutty flavor and refreshing fruitiness. The Mexican cacao, on the other hand, has a powerful cacao flavor, with a spiciness and woodiness that spreads through the aroma of licorice. The acidity and strong bitterness of the cacao combine perfectly, resulting in a rich, powerful cacao flavor and spicy, woody aromas. The aroma and deep sweetness create a perfect harmony. The chocolate, named "Grande H," is derived from the Italian name of the hotel, "Grande," and the initial "H" of Hyatt and Kaneko's names.

Grand Hyatt Tokyo's Infection Prevention Measures>
The safety and health of guests and employees is our top priority at Grand Hyatt Tokyo's restaurants, and we are taking infection prevention measures based on Hyatt's new "Global Care & Clean" hygiene initiative. Temperature checks are required for all guests and employees upon entry. We have also installed hand sanitizer throughout the hotel and strengthened disinfection of high-touch surfaces in public spaces. In addition, we have reduced the number of seats in our restaurants to ensure social distancing, and we have limited the number of customers allowed in the Pastry Boutique. We also provide alcohol-based disinfectant pads (75%) to guests so they can disinfect their hands immediately before eating. Menus are now laminated for easy disinfection and can be viewed via QR code. The kitchen is also disinfected more frequently, employees wear masks and gloves, and wash their hands and gargle at regular intervals. Cutlery is also wrapped in napkins and other measures are being taken, and these will continue to be updated in accordance with hygiene instructions.
