The second installment of our pairing series is a series of six types of chocolate to pair with white wine and red wine respectively. Both wine and chocolate have complex flavors that seem to be layered, so combining them brings out the exquisite flavors of each other.
 
This series brings together specialists, with wine experts from Belgian restaurant guide Gault & Millau teaming up with wine sommeliers Sepideh Sedaghatnia and Neuhaus to create six types of chocolate each.

First published in 1969, this French restaurant guide enjoys strong global influence on par with Michelin.
 
Sepideh Sedaghatnia
Sepideh Sedaghatnia left her native Iran at the age of 17 to become a professional wine sommelier in Europe. After gaining experience at top restaurants, he was awarded Sommelier of the Year at Gault & Millau in 2014. The following year, in 2015, he opened his own wine bar, Divin by Sepi, in Antwerp. He has also published several books on wine.

Founded in 1857, Neuhaus is celebrating its 164th year in business and is a long-established maker of original Belgian chocolate with its flagship store in Galeries de la Reine in Brussels, the capital of Belgium. The company has built close ties with the Belgian royal family, having been featured at the World Expo held in Belgium. The high quality of Neuhaus chocolate has been recognized, and the company has been awarded the title of Official Purveyor to the Belgian Royal Family.
Neuhaus started out as a pharmacy. Founder Jean Neuhaus first wrapped medicine in chocolate to delight his customers.
