
The "Fermented Brewing Future Forum," themed around "Japanese Fermented Brewing," will be held at the United Nations University in Aoyama, Tokyo, on January 14th and 15th, 2017.
The event is being organized by the Farmers Market Association, which has previously hosted various fermentation-related events such as those on bread, sake, and craft beer, in collaboration with Hakuhodo's "Falling in Love with Art and Science." This time, the theme is "Japanese Fermented Brewing," and the forum will consist of two parts: the "Fermented Market" and the "Fermented Symposium."
The "Fermented Market," held on January 14th and 15th, 2017, will be held in the courtyard of the United Nations University in collaboration with Farmer's Market @ UNU. On the day, the forum will feature the "Kura Bar," where you can enjoy sake from breweries across Japan, and the "Fermented Bar Bar Bar," a magical soy sauce bar, introducing soy sauce, miso, mirin, bonito flakes, sake, and natto breweries from across Japan. Other specialties include ramen made with honkare bonito flakes by Chef Shinobu Namae of the two-star Michelin restaurant L'Effervescence; a hot sake bar from Zenchidori, a renowned sake izakaya in Nishi-Ogikubo, Tokyo; and fermented dishes by And Chinoise, a culinary unit using fish sauce and herbs to convey the cuisine of French Indochina. Participants can enjoy the food and drink by purchasing a combined food and drink ticket and original sake cups at the reception desk on the day of the event. Prices are 1,000 yen for five tickets, 2,000 yen for ten tickets, 4,000 yen for 20 tickets, 500 yen for the original sake cup, and 800 yen for the original masu cup (limited to 100). Meanwhile, the "Fermented Symposium" to be held on January 15th will feature expert guests with diverse and creative opinions that transcend the boundaries of expertise, for a cross-industry talk on the future of Japanese cuisine. Speakers include Kitamoto Katsuhiko, professor emeritus at the University of Tokyo, Dominic Chen, a leading information science researcher and IT entrepreneur, HAND-RED, a brewery association that preserves traditional handcrafted techniques, Namae Fuminori, chef at L'Effervescence, hip-hop artists DJ Misoshiru and MC Gohan, and food essayist Hirano Sakiko. Participation is free, but advance reservations are required.
