The "Annou Sweet Potato and Earl Grey Cheese Tart" is an autumnal dish made by layering Earl Grey whipped cream on top of cheese dough, and then squeezing a generous amount of special cream made from baked Annou sweet potatoes from Tanegashima, Kagoshima Prefecture, and custard into the shape of a Mont Blanc. The tart is luxuriously topped with bite-sized candied sweet potatoes, creating a moist cheese tart with a rich, sweet flavor from the roasted sweet potato and the gorgeous aroma of Earl Grey.
