"Flower Bavarian Cream Havaro," a specialty store that uses edible flowers, opens at Tokyo Station

May 15, 2015

"Hana no Bavarian havaro," a specialty store for "flower bavarois," a sweet made with edible flowers, opened on May 1st at "TOKYO ME+" in Tokyo Station's Ichibangai.

Edible flowers are "edible flowers." Currently, approximately 20 varieties are available in Japan, including pansies and snapdragons. Furthermore, many edible flowers are highly nutritious; pansies contain approximately four times the vitamin C of spinach.

The shop was established as a result of the collaboration between various businesses, including edible flower growers, and pastry chefs who wish to create sweets that will be loved for generations. It offers a visually stunning, innovative dessert experience, combining colorful edible flowers with exquisite bavarois.

Three innovative desserts using edible flowers were introduced to coincide with the opening. The lineup features a vibrant array of sweets, combining colorful edible flowers with exquisite bavarois. Among them is the "Bouquet" (1 whole cake / 2,000 to 2,800 yen; selling price varies depending on the type of flower and purchase price), a No. 5 size donut-shaped dessert. Flavors include vanilla yogurt, which maximizes the floral flavor, fraise, made with strawberry puree and fresh cream, and rich chocolate. There are six other flavors to choose from, including orange, cream cheese, and matcha. "Petal" (1 set / 1,800 yen), inspired by flower petals, is a bite-sized cube-shaped dessert perfect for a gift. It comes in a box of eight, with two of each of the four flavors: vanilla yogurt, fraise, orange, and chocolate. "Fleur" (350 yen) is a flower-shaped dessert, sized like a piece of cake. The flavors available are vanilla yogurt, fraise, orange, chocolate, and cream cheese.

Starting with the shop that opened in Tokyo Station, "Hana no Bavarian cream havaro" plans to open stores in Ginza and Kabuki within the next three years, as well as selling in department stores. In addition, a limited-time shop will open at the Sweets Park on the second basement floor of Ginza Mitsukoshi from May 27th to June 2nd.
