
Mineno Hakubai Sake Brewery in Echigo, Niigata Prefecture, has been pursuing the creation of light, dry sake, and has announced a new sake called "KING OF MODERN LIGHT" that suits the diverse needs of today's food culture.
This new product, which completely changes the image of this long-established sake brewery, features a juicy, rich acidity and soft sweetness for easy drinking, and is intended to be enjoyed at room temperature or chilled. The high acidity tightens the flavor, and the malic acid creates a fresh, crisp finish, making it a sake that never tires of drinking and easily blends with a variety of dishes.
The first two varieties are "KING OF MODERN LIGHT Junmai Daiginjo" (1,650 yen), made with 100% Yamadanishiki rice and polished to 50%, and "KING OF MODERN LIGHT Junmai Ginjo" (1,350 yen), made with 100% Gohyakumangoku rice and polished to 60%. Additionally, the names give off a musical vibe, such as "King of Rock," "King of Jazz," and "King of Hip Hop," and the label design is inspired by "records mixed with alcoholic yeast," with the different colors of each label representing the different flavors. The second series is scheduled to be released next spring, and the third series will be released next fall, with two types each.
