A trip to Kyoto to try Grandma Yuri's Tarte Tatin, a taste passed down from great-grandmother to granddaughter

Located next to Kyoto's Heian Shrine is La Vature, a charming shop reminiscent of a French pastry shop. Upon opening the wooden door, a soft, sweet aroma fills the air. The interior, with its mosaic tile floors, white walls, and antique round tables, has a retro feel, and the sunlight is pleasant and inviting.

La Vature is a Tarte Tatin shop run by Yuri Matsunaga, born in the Taisho era. Yuri was so impressed by the Tarte Tatin she ate on a trip to France that she recreated its flavor using her own unique recipe. The flavor has been acclaimed in France, even receiving an award from the Tarte Tatin Association.

Each Tarte Tatin uses approximately 20 apples. The apples are slowly caramelized with butter and sugar for over four hours until caramelized, then the tart dough is placed on top and baked. The tart is then flipped over and the Tarte Tatin is complete. This Tarte Tatin boasts a beautiful caramel-colored gradation from its jewel-like sparkling surface to its base. Its rich flavor is perfectly balanced between sour and sweet. The texture of the apples, both soft and crunchy, is also exquisite. The yogurt sauce accompanying the Tarte Tatin complements the sweetness of the caramel, creating a comforting, gentle flavor. Yuri, who sadly passed away two years ago at the age of 92, always sat in a corner of the restaurant. A sign reading "reserved" and a photo of her smiling happily, wearing her medal from the Tarte Tatin Association, still hang on her seat. It's as if Yuri is still smiling as she watches customers savor their Tarte Tatin. The La Vature flavor, preserved for over 30 years, is faithfully passed down to her granddaughter, Maya Wakabayashi. Just like the apples in their Tarte Tatin, this shop is filled with the love of their family.
