Frederic Cassel, based in Fontainebleau, a suburb of Paris, unveiled a collection of entremets, petit gateaux, and Christmas cakes, including the 2016 Galette des Rois, and even a Valentine's Day collection, all due for release from October 2015. The final item, the "Cocotte Trompe-l'oeil," drew gasps of surprise from the audience. The cocotte (pot) contained a hazelnut biscuit infused with orange syrup infused with grape pepper, topped with a gateau made of fresh orange and coffee-flavored mascarpone. The collection was conceived with the concept of "sharing joy and time like cooking," and the cocotte itself was edible and made of chocolate. "Trompe-l'oeil" refers to optical illusions. Its tiramisu-like structure is recommended for eating with a spoon.
The idea for this cake came about when Gregory, who is in charge of product development at Frederic Cassel, participated in a French television program. The theme of the final was "optical illusion." So Gregory created a cake modeled after a cocotte, which is also known in Japan for Le Creuset and Staub, and won the competition.
In addition to the large "Entremet" (7,500 yen), there is also a single-serving "Petit Gateau" (1,400 yen). This will go on sale from November 25th.
"The concept is for this cake to be shared with close friends, so although there is a smaller size available, I would recommend the larger size so that everyone can enjoy it," says Cassel.
