
The annual chocolate festival, Salon du Chocolat 2015, will focus on "Bean to Bar," a brand that handles everything from roasting cacao beans to turning them into chocolate bars in its own workshop.
Prior to the opening of Salon du Chocolat 2015, a seminar will be held on January 14, 2015, themed around "Bean to Bar." Grand Chef Shunsuke Saegusa of Chocolatier Palet d'Or, a chocolatier that processes cacao beans, and Morinaga & Co., a pioneer of "Bean to Bar" in Japan, will discuss the appeal of "cacao" and "chocolate."
Shunsuke Saegusa opened Chocolatier Palet d'Or in Umeda, Osaka in 2004. He currently has a store in Marunouchi, Tokyo. "Artisan Pare d'Or", which processes cocoa beans, was launched in the Kiyosato Plateau and is actively incorporating the "Bean to Bar" approach.
Fashion Headline will invite 20 people to this seminar by lottery (up to one accompanying person may apply). There is a fee for the seminar, which will be paid at the venue on the day. The application deadline is noon on December 24th. Successful applicants will be contacted by email on December 25th.
