If you want to enjoy the deliciousness of bread with all five senses, it's best to choose a shop that specializes in flour. The aroma of golden-brown bread whets the appetite, and the moment you bite into the perfectly toasted surface, a happy crunch resonates in the back of your ears. A rich sweetness fills your mouth. The weight of the bread in your hand is conveyed by the bread's ingredients and the artisan's sincerity. Nakagawa Komugi-ten (52-1 Shimogamo Matsunoki-cho, Sakyo-ku, Kyoto City, Kyoto Prefecture), located near Shimogamo Shrine, evokes such a happy feeling. Even the shop's name clearly indicates its love for wheat. Their signature item is the "Pain Comple" (574 yen for a loaf, 287 yen for a half loaf), made with 100% homemade whole wheat flour milled from organic brown wheat. The bread is fermented for a long time at low temperature using natural raisin yeast. Other popular items include the 100% organic wheat "Toast Montagne" (¥556 per loaf, ¥278 for half), a round loaf of bread, the "Petit Montagne" (¥69), and the "Baguette Rouge" (¥222), made with dough aged at low temperature for a long time with minimal yeast. "Some people come in to buy bread before breakfast, while others come in in the evening to eat it the next morning. Customer ages vary. We even have elderly people and small children who come alone," says the owner. Until 2011, the bakery didn't have a physical store, but instead gained popularity as a "weekend-only bakery" selling bread at events. Now, people can buy bread whenever they want, except on closed days, which is extremely lucky for those living nearby.
